Central Florida Zoo’s Speaker Series to Present Sustainable & Locally Sourced Dinner Featuring Cress

EVENT DESCRIPTION:
An evening of fine dining, collaborative conversation and casual entertainment all to help our environment.

The evening features Chef Hari Pulapaka and Sommelier Jenneffer Pulapaka, co-owners of Cress Restaurant in DeLand. The masterfully-prepared dinner will be paired with biodynamic and organic wines. The intention of the Zoo’s Speaker Series is to entice a conservation and educational discussion among attendees in a casual setting. “We feel this evening will be a lively conversation between the James Beard nominee, his wife, the restaurant’s sommelier and food activist, and Zoo guests regarding seafood sustainability, appropriate sourcing of food, food waste, and foraging, all while enjoying a wonderful meal at the Zoo”, says Phil Flynn President & CEO of the Zoo. The Zoo and Cress Restaurant both partner with Monterey Bay Aquarium’s Seafood Watch® program which works to engage and empower consumers and businesses to purchase seafood that is fished or farmed in ways that minimize their impact on the environment. A highlight for diners, if they so choose is the preparation of the invasive, predatory, yet delicious lionfish. Hari and Jenneffer are active members of the Seafood Watch® Blue Ribbon Task Force and will be joined later this year by other Florida chefs in “making a splash” about the sustainability of lionfish.The menu includes: 1st Course - All Local Salad; 2nd Course - Florida Lionfish: Two Ways or Seely’s Ark Farm Breast of Chicken or Chef’s Vegetarian Creation; 3rd Course - Vo-Lasalle Farm Strawberry Panna Cotta
